I have a confession to make ... ok, not really, because if you've visited me for awhile you know that I don't like to cook. Usually when I see some picture of food recipe that I like I buy the ingredients and have Mr. DIY make it. Remember, he was a professional chef for many years - I ain't no dummy : )

Anyway, my youngest daughter's boyfriend's family has a big garden and keeps bringing us these beautiful veggies and tomatoes. We probably had two bowl fulls of red and orange tomatoes. The orange ones are really sweet and have been eating them everyday on salads and sandwiches, but I still had a bunch left. I remember I had starred a black bean salsa recipe from Party Box Design last month  and thought it would be great to make with those gorgeous tomatoes. A couple of nights ago I made (all by myself!) a 1/2 recipe just in case it wasn't a hit. There were only 3 of us and there was very little left over, so yesterday I made a whole recipe for dinner.
I don't even like beans and corn and I thought it was good. I omitted the bell peppers and added a few extra tomatoes. 

Here's the recipe:

2 15oz cans black beans, rinsed & drained.
2 TBS chopped pickled jalapenos or fresh jalapenos
4 cloves minced garlic
3 TBS olive oil
1 10oz package frozen corn (I used canned corn) 
1 cup diced onion
1/2 cup diced red bell pepper
1 large tomato seeded & diced
3 TBS chopped cilantro    
  (I don't like cilantro, so I use  a little less parsely)
3 TBS fresh lime juice
1 TBS chili powder
2 tsp ground cumin

Cut and combine all ingredients and serve with tortilla chips. So simple too!

  3. This is my second food post I've seen this morning. I have to fast for 12 hours to have blood work done now you guys are making me hungry here! LOL This looks yummy and to have home grown veggies makes it even better. Lucky you your hubby cooks...mine makes peanut butter and jelly sandwiches and is so proud of it! LOL
